This program provides a thorough overview of food culture in the Hispanic World. It takes advantage of its location in Spain to explore the material aspects of food. These include familiarity with ingredients and their sources, visits to markets, and a knowledge of local food culture in the home and in public spaces. The program provides an account of foods and cultural practices from Prehistory (in the case of Spain) and pre-Columbian times to the present. Because the program seeks to give an integrated overview of the Hispanic world, particular attention will be paid to the biological and cultural exchanges between Latin America and Europe (Spain). Exploration of the material aspects of food culture in León will be a key component of the program, in order to take full advantage of the program location in Northern Spain. Students will take several trips, including one to the Basque Culinary Center in San Sebastián.
